Appetizing Bites to Ring In New Years Eve

Can you believe New Years Eve is just around the corner? We're just as shocked as you are--but luckily we're ready with yummy ideas for appetizers to share so that you can ring in the New Year happily and healthfully.

Why these appetizers over others?

We chose these ten appetizers because each has less than 5 ingredients and includes a fruit or vegetable. Can we all agree to eat more fruits and vegetables in 2020?
1. Caprese salad skewers:

All you need is mozzarella, fresh basil, cherry tomato, balsamic vinegar and olive oil. Super simple and a show stopping presentation.

2. Cantaloupe wrapped in prosciutto 
3. Veggie pitas:

Layer a small toasted tortilla with hummus, roasted red peppers and top with feta cheese. Serve in triangles if desired.

4. Cucumber smoked salmon stacks:

Layer sliced cucumber, a dollop of Neufchatel cheese, smoked salmon and top with capers.

5. Sweet potato rounds:

Toast thinly sliced sweet potatoes in the oven, top with drizzled honey, blueberries and serve with yogurt for dipping.

6. Turkey and cheese lettuce wraps:

Mix up your "wrap" by alternating rolling turkey and cheese in either red leaf lettuce, kale or butter leaf lettuce

7. Spinach stuffed mushrooms:

Hollow out fresh button mushrooms, replace with this mixture--1 egg, 1/4c cornmeal and 1/2c thinly sliced spinach, 2T milk. Bake in 350 degree oven for 30 minutes. 

8. Roasted chickpeas and dried apricots:

Spread out canned chickpeas on a baking sheet, top with 1T garlic, 1/2tsp sea salt, 1T onion powder. Drizzle with olive oil and place in a pre-heated 400 degree oven for 20 minutes. Remove and serve with dried apricots.

9. Figs wrapped in proscuitto:

You don't even need a toothpick to keep them closed. Enough said!
