Chicken Sausage Scramble

6 servings | 25 minutes | Per serving: ~122 calories, 8g fat (3g saturated fat), 5g carbohydrates, 8g protein

Ingredients:

3 cups Russet Potato (washed, peeled and diced)

12 ozs Organic Chicken Sausage (sliced)

1 cup Red Bell Pepper (washed, cored and sliced)

1 cup white button mushrooms (washed and sliced)

1 cup sweet onion (diced)


Directions:

1. Brown the sausage and onion over medium heat on the stove in a skillet.

2. Add the red pepper and mushrooms and stir until cooked.

3. Add fresh basil and black pepper to taste. Remove from heat and serve.
