Chili Lime Avocado Chicken Salad

Ingredients:

6 cups arugula

1/2 cup avocado (diced)

1 cup cherry tomatoes

8 ozs chicken breast (roasted, rotisserie style (skin removed))

1/4 cup slivered almonds

1/4 cup apple cider vinegar

1/4 cup water
-
2 tbsps extra virgin olive oil
-
3 tbsps lime (freshly cut and squeezed for juice)

1/4 tsp red hot chili pepper (chili pepper flakes)
Directions:

Mix the dressing in a small bowl: vinegar, water, olive oil, lime juice & chili pepper flakes. Set aside.

Chop and arrange the vegetables in a larger bowl.

Top with the dressing and slivered almonds. Serve immediately.
