Knock Off Crunch Bar Protein Bites

These decadent protein bites have less fat, sugar and calories than the "real deal" and are super easy to make--15 minutes to assemble and 1-2hours to chill in the freezer before a quick roll in powdered sugar.

Ingredients:

1c almonds

1c pitted Medjool dates

1 1/2c uncooked oats

1/4c vanilla protein powder

1/4c water

2/3c maple syrup

1T cocoa powder

1T chia seeds

powdered sugar for dusting

Directions:

  1. Place the almonds, dates, syrup and protein powder into a high powered blender and pulse until smooth.
  2. Add the water, chia seeds, cocoa powder and oats to the blender. Blend until smooth and a dough like texture is achieved.
  3. Using a tablespoon to portion the mixture, roll the dough into 18 balls and place into a a freezer safe dish or bag. Freeze the balls for 2 hours before serving. Garnish with powdered sugar if desired. Leftovers can be stored for 5 days in the refrigerator.
