Zucchini Pizza Bites

Its snack time! Quick, do you have 30 minutes? That's how long it takes before you have piping hot pizza bites on the table just in time for that football game, movie night or kids' after school snacking--the best part? You need just 6 ingredients!
Ingredients:
1 large zucchini sliced into fifteen 1/4" pieces
2T light olive oil (we use this oil because of its higher smoke point in this recipe--meaning it doesn't burn as quickly as extra virgin olive oil)
4oz. low-fat mozzarella cheese
1c crushed tomatoes
2tsp dried basil
1/2tsp dried garlic
Directions:
- Preheat an oven to 400 degrees. Wash the zucchini and slice into round & even 1/4” pieces.
- Heat olive oil in a pan large enough to fit all 15 zucchini slices. Lightly sautee zucchini slices for 2 minutes on each side. Remove zucchini from the pan and place on a non-stick cookie sheet.
- In a small mixing bowl, combine the crushed tomatoes and spices. Top each zucchini slice with one mozzarella piece and 1T of tomato mixture.
- Lastly, top the bite with your favorite “extra” like 1/2 pepperoni slice or 1 black olive. Bake for 15 minutes or until the cheese melts! Remove and let cool before serving.

This recipe can also be modified to use other veggies as a base--we've tested it with summer squash, too!
